Winemaker Christophe has been farming biodynamically since 1999 and believes in minimal intervention thus allowing the soil to express the minerality of each terroir. His wife Yuka, a talented Japanese chef also runs the Domaine with Christophe.
Like the Gyotaku cuvée, it is a Gentil (a blend of several grape varieties). . Obviously very aromatic, spicy, supple and deep, The wine has been specially blended to compliment spicy dishes such as those found in Chinese food, Indian, Korean, Thai and Mexican cuisine. It is also a perfect companion for aperitifs, desserts and strong cheeses.
